What a great award issued since last year by the Michelin Guide !
Since 2020 indeed, the famous gourmet guide has rewarded restaurants that combine gastronomy and sustainability, by awarding them a green star.
In total, 33 establishments in France were awarded in 2021 including the Scratch Restaurant in Bourg-en-Bresse (Ain), Atmosphères in Bourget-du-Lac (Savoie), Le Toi du Monde in Flumet (Savoie), L’Auberge de Montmin in Talloires-Montmin (Haute-Savoie) and… finally La Mirande in Avignon !
This new star is amply deserved by Florent Pietravalle, Séverine Sagnet and the teams of the gourmet restaurant and Mirage, this tavern that appeared in CoVid times in the hidden kitchen of the Palais des Papes.
But in addition, it crowns the fruit of a reflection carried out by the owners, of a shared ethics and of a conviction to which we are also attached, namely that each of our gestures of consumption must seek to be the more responsible possible.
The commitment is this : a sustainable approach to cooking, respecting the soil, the seasons, organic and local products !
We can no longer deny that we are having an impact on our planet. Not to continue this consumerist frenzy and produce less and better is an adage that is absolutely obvious. Thank you, La Mirande, for combining pleasure and eco-responsibility!
